Chocolate Zucchini Bread

Prep Time: 15 minutes

Cook Time: 50-60 minutes


Ingredients:

8 tablespoons (1 stick) unsalted butter @ room temperature

1 cup granulated sugar

2 large eggs

1/2 cup unsweetened cocoa powder

2 tsp baking powder

1 tsp pure vanilla extract

1/4 teas kosher salt

2 cups coarsely grated zucchini

1 1/3 cups all purpose flour (plus a little extra for

the pan)

1/2 cup semisweet chocolate chips


1. Coat an 8x5 inch loaf pan with cooking spray and a little flour. Preheat oven to 350 degrees.

2. In a large bowl, cream together the butter and sugar until it is light and fluffy. Then, beat in the eggs one at a time until completely combined. Stir in cocoa powder, vanilla extract, salt and baking powder. Fold in the grated zucchini & add the flour and chocolate chips to the bowl. Stir until just combined.

3. Transfer to the loaf pan and spread into an even layer. Bake until a toothpick inserted into the center of the loaf comes out clean (although there may be some melted chocolate on it from the chips). *Will bake between 50 and 60 minutes.

4. Let the bread cool in the pan for 10 minutes. Then flip onto a wire rack and cool completely before eating (the tough part).
