Southwest Pasta Salad

A quick & easy pasta salad with a southwest twist!


Mix all ingredients together until combined and chill in the refrigerator.


Prep Time: 10 minutes

Cook Time: 15 minutes:

Total Time: Under 30


Ingredients:

1 lb of pasta (any kind will do)

3 cloves of garlic, pressed

1 1/4 cup of vegenaise

1 1/2 cup black beans

1 1/2 cup corn

salt, pepper to taste


Southwest Seasoning:

1 Tbs chili powder

2 tsp paprika

3 tsp cumin

2 tsp garlic powder

1/2 tsp salt + pepper


Optional ingredients:

1/2 cup onions, diced

3/4 bell peppers, chopped


1. Cook pasta, drain and wash it with cold water.

2. While the pasta is cooking, combine all ingredients together.

3. Mix pasta into large bowl & enjoy!
