Peach Crumble Bars
Made with fresh peaches - this recipe makes it feel like summer year round!

Crust Ingredients:
3 cups flour
1 cup sugar
1 teas. baking powder
1/2 teas. salt
1/4 teas. cinnamon
1 cup cold butter, cut into small pieces
1 large egg
Peach Topping:
6 large pieces, peeled & diced
1/2 cup sugar
1 Tbsp cornstarch
1/4 teas. cinnamon
1 teas. lemon juice
Icing:
1 cup powdered sugar
1/4 teas. almond extract
1 Tbsp. milk
Preheat oven to 350 degrees (glass pan), 375 degrees (metal pan). Lightly spray a 9x13 baking pan.
Make crust by mixing together 1 cup of sugar, 3 cups flour, baking powder, salt & cinnamon. Mix in the small pieces of butter until you have a rough crust. Add the beaten egg & mix. The crust will be crumbly. Press half of the dough into the pan.
Make the peach topping by mixing sugar, cornstarch and cinnamon together. Add in the diced peaches & lemon juice & toss until mixed together. Pour the peach topping over the crust & spread even.
Press together the remaining crust to form clumps. Spread the clumps of crust mix over the fruit layer. Some of the peach topping will show through when done.
Glass pan bake for 50-55 minutes. Metal pan bake for 40-45 minutes.
Whisk icing ingredients together & chill in refrigerator before drizzling.
When cooled, drizzle icing on the bars.
Serve either warm or chilled. Enjoy!
Refrigerate remaining dessert.
